Easy Creamy Gnocchi Sauce

Image
This creamy gnocchi sauce is done in minutes! Pecorino cheese, butter and pepper make the tastiest weeknight dinner: Italian comfort food at its finest. Dinner in 15 minutes? Oh yes. Alex and I have a new trick we’ve been dying to share with you: our Creamy Gnocchi Sauce! It takes just minutes to make the sauce, and the gnocchi boil up in 3 minutes. The flavor? It tastes like the fanciest ever mac and cheese: but takes literally no effort at all. We modeled it after one of our favorite Italian recipes , Cacio e Pepe pasta (literally “cheese and pepper pasta” in Italian). Our version uses gnocchi pasta and it’s simply to die for. Alex and I curled up with bowls of this comfort food on the couch on a rainy evening and it was pretty much perfection! Secrets to the fastest gnocchi sauce So, back to that Cacio e Pepe . Alex and I had this famous simple pasta dish in Rome and fell in love. It’s a sauce made with Pecorino Romano cheese, a hard cheese that’s like Parmesan on steroids. I...

Ready for the best fall drink? This apple cider slushie is so easy to make and looks stunning! With a hint of cinnamon and cloves, it’s perfectly cozy. No fall is complete without a trip to the apple orchard (in our minds, at least!). This year, after we picked our apples with friends, our son Larson and I got an apple cider slushie to share. Man, was it refreshing! The slushie was just sweet enough, the perfect beverage for a crisp fall day. Of course, my first thought was: I have to make this at home! Alex and I got to cooking, and came up with how to do it. Here’s that apple cider slushie: it’s got a pure cider flavor and a cozy hint of cinnamon and cloves. Best of all, it looks stunning for fall entertaining or leaf peeping! Here’s how to make it. How to an apple cider slushie: two methods It couldn’t be easier to make a homemade apple cider slushie: don’t worry, you don’t need a slushie machine! Pumpkin Shakshuka with Feta and Pepitas

Image
Post sponsored by Pete and Gerry’s Organic Eggs . See below for more details. There’s nothing better than creamy baked eggs, especially when the weather starts to get cooler. This recipe makes for a delicious breakfast but I actually love this recipe for dinner. Pair it with a side salad and some crusty bread (a must no matter what time of day you’re eating this!). The pumpkin sauce One of my favorite fall treats is a creamy squash sauce. I’ve made something similar before with the help of leftover roasted butternut squash and sweet potatoes. However, the pumpkin here adds a lovely flavor. Plus, it gives you a reason to cook a whole pumpkin. Of course, you don’t have to do that- I provide a way to use canned pumpkin in the notes section of the recipe. There are also many ways you can roast a pumpkin. I like cutting it down into manageable wedges but leaving the skin and seeds on. Then, once the pumpkin is cooked and cooled slightly, the skin peels off and the seeds easily scoop ...

Retroperitoneal abscess with pylephlebitis

Image
Stimulated by Lee et al 2019.[1] Photo by Anton Nikolov on Unsplash . My favourite place to get images is Unsplash. It doesn’t have anything on the retroperitoneum or abscesses, so I went with loin, and then kidney, and found this lovely image of a kidney shaped lake. The title may sound to you like another adverse event report, and you’d be right. But what is pylephlebitis? I didn’t have to look it up as the authors gave an alternative description in the paper , which is in the open access journal BMC Surgery – follow this link and have a look at all the fabulous images. Pylephlebitis is thrombophlebitis of the portal vein or its branches. The images are great and the story is interesting because it was a bit of a detective mystery for the clinicians involved, but as usual there is insufficient thought concerning the acupuncture and the precise mechanisms involved in this adverse event. An 80-year-old man presented as an emergency with myalgia and abdominal pain. He appeare...

Here’s of the coziest soups out there, ready to join the ranks of tomato basil and wild rice . Yep, it’s mushroom barley soup! This one is full of flavor: it uses both dried and fresh mushrooms for earthy savoriness. And it’s got a warming broth and nutritious veggies. But the star? Whole grain barley, which infuses each bite with a pasta-like chewy texture. If you love barley soup, you’re going to be all about this one! It’s perfect for healthy desk lunches in a thermos or enjoying a big steaming bowl after a long day. Alex made this one for me, and from the first bite I was hooked. Mushrooms: both dried and fresh! It took me years, but I finally learned to embrace the incredible flavor you can get from the humble mushroom, especially in plant based recipes . For this recipe, you’...
