A few years ago, many people I knew loved to eat sushi, so did I! It was one of my favorite meals. We would go out two to three times a week to have what what we believed to be a delicious and healthy meal. Within a few months one of my friends started to develop strange symptoms that eventually were discovered to be from mercury toxicity. Luckily for my friend, just not eating sushi anymore cleared the problem over a few weeks. Our bodies have an advanced detoxification system. However, because of the ever increasing amounts of chemicals in our environment, our ability to detoxify becomes more easily overwhelmed than it did. Six months have passed since our son Larson was born. And in those six months, he’s turned from an infant into a real boy. He wears jeans and loves dogs. I love cooked zucchini when done well. Grill it, roast it, or sauté it- there’s so many options. However, I often forget how great zucchini is raw, especially with herbs in a fresh summer recipe. These zucchini summer rolls really show this well. The zucchini is left in strips that are tossed in a wonderful herb mixture that’s finely minced and coats the zucchini/cabbage mixture. Perfect for a light lunch or road-trip snack. Also, I didn’t specify a sauce for these but a few different ones would work. Try a simple soy/rice vinegar/sesame mixture or step up your game with a tahini sauce . The flavors work well with many different kinds so find which type of sauce works best for you! I was shopping for plates the other night (for a photo shoot), and had a very specific idea of what I wanted - millennial pink, clean lines thick, modern rim.
